Food safety standards used to be published. Now they are enforced. In most markets our customers sell into, that shift happened inside the last decade, and it changed what a biscuit line has to be.
The plants that struggle with it are rarely the ones with poor cleaning discipline. They are the ones whose machines fight the cleaning routine every single time.
What makes a biscuit machine hygienic?
Hygienic machinery is built so that it can be cleaned quickly and verified easily: food-grade stainless steel contact parts, smooth contours with no traps, open access to every surface that touches product, and drives that keep lubrication away from the food zone. Hygiene is a design outcome, not a cleaning procedure.
The three places flour and fat collect
Anyone who has cleaned a biscuit line at the end of a run knows the enemy.
Painted surfaces.Paint chips. Chipped paint traps residue, and it eventually finds its way into product. More immediately, a painted surface cannot be cleaned aggressively without damaging the surface further, so cleaning gets gentler over time exactly where it needs to get harder. Sunbeam launched India's first paint-free all-stainless biscuit machines in 2006, and the reason was this and only this.
Chains.A chain drive in a flour environment is a collection of small gaps holding a mixture of flour, fat and lubricant. It needs oiling near the product. It cannot be cleaned properly without stripping it. And it wears in a way that shows up downstream as weight drift, which means it is a quality problem as well as a hygiene one. We launched India's first chainless rotary moulder in 2004 and have been removing chains from the rest of the line since, including the all-stainless chainless gauge roller in 2020.
Belt tracks. A conventional belt runs in a track, and that track is one of the hardest things on a line to clean and one of the easiest places for microbial growth to establish. Track-free antimicrobial TPE belts remove the geometry entirely.
Cleaning time is production time
The argument usually made for hygienic design is compliance. The argument that actually persuades a plant manager is simpler.
Every hour spent cleaning is an hour not producing. A line that takes four hours to clean down and a line that takes ninety minutes are not two versions of the same asset. Across a year of scheduled washdowns, the difference is measured in tonnes.
And there is a second effect, harder to quantify and more important. A line that is quick to clean actually gets cleaned, fully, every time. A line that is a struggle gets cleaned properly when there is time and adequately when there is not. Nobody plans for that. It just happens, at four in the morning, at the end of a long shift.
What we changed, and why
The Super Hygiene series came out of watching that pattern on customer floors. The changes are unglamorous and they compound.
Paint-free stainless construction throughout, so surfaces can be cleaned as hard as they need to be. Smooth contours, so residue has nowhere to sit. Open access to every product-contact surface, so cleaning does not require dismantling. Wheeled stainless catch trays beneath the machines, so what falls is caught and removed rather than swept from under a frame. Antimicrobial track-free TPE belts. Chainless drives wherever a chain can be designed out.
Then the layout itself. Lines are drawn to minimise human contact with the product, which is the single most effective hygiene intervention available and the one that costs nothing to run once the line is built. It aligns with what GMP and HACCP frameworks are asking for, and it makes an audit a routine rather than an event.
Hygiene and maintenance are the same conversation
The design changes above were made for hygiene. They paid for themselves in maintenance.
A chainless drive has less to wear and less to adjust. A machine with open access is faster to inspect, which means faults are found early. Standardised interchangeable parts mean a smaller spares inventory and a simpler decision when something does need replacing. Scheduled maintenance gets shorter, and unscheduled maintenance gets rarer.
This is why we treat hygiene as an engineering question rather than a cleaning one. The machine that is easiest to clean is usually also the machine that is easiest to keep running, because both properties come from the same decision: design out the places where things can hide.
What to look at on a factory visit
If you are evaluating machinery, four things are worth checking with your own eyes rather than reading in a specification.
Look at the welds and the corners on a product-contact surface. Look for chains, and ask what is driving each section without one. Look underneath the machine, and ask what catches what falls. And ask to watch a washdown rather than a production run, because the washdown is the thing your team will do several hundred times a year.
